For Oct/nov you are better off further north. The water will be cold, but less so than NSW and further south.

You may not find the chefs willing to do this here.

Most of the kitchens are quite cramped compared to the US and other countries. It may not be possible logistically.

Yes, but in Australia you don't get tips - just a standard wage. So you don't make money fast.

I just really didn't like squishing between all the tables and the grumpy diners and the rush etc. M ...

David, the 2 days went by far too quickly.
