Hi Gisele,

Yes, Honey of any sort (with the possible exception of Tasmanian Leatherwood - that stuff is vile), works extremely well as a sweetner and imparts a lovely honey flavour to the bread.

Wow, I'd not heard of using a microwave to rise/proof bread. I'd be worried that the microwave would kill the yeast.
