Does anyone know why my olive oil (unsaturated) and sushi vinegar based ginger-salad dressing goes all lumpy in the fridge? I whipped up a batch the other day and when I went to use it a couple days later it was all gloopy.

Olive oil isn't meant to be refridgerated, it is coagulating in the cold. Try only making enough for one salad, so there is none left over.

though I really should follow the idea of only making a little at a time, i never never do and always have too much extra sauce/dressing/soup, etc., so I have gotten very good at figuring out how to make it work.

The best way is to just let the dressing come to room temperature. Once it has heated up, the oil will go back to normal and you can whisk it right back in. Of course, if youre a little impatient like I generally am, you can pop it in the microwave for a few seconds (but really just a FEW seconds!) make sure to vent it, or youll have a giant mess. Surprised

Speaking of vinaigrette, I made one yesterday using a small, rather silly cappucino-froth-maker my boyfriend got from someone for Christmas. Down with the ingredients, on with the lid and down with the little pathetic whisk and push the button. Bzzzzz - and voilà, vinaigrette! Not necessary I guess, but fun. And I found a way to use that froth-thing.

And as for the dressing, don´t worry. The lumps will disappear after just a few minutes in room temperature as said above.
