This is a recipe we've had in the family for years. I love this recipe. Lots of chopping involved and you have to like spicy food. Makes a large batch but you can freeze it.

2 Pounds of Couscous
2 cups of water
a bit of butter
***

2 pounds of chicken
2 onions finely chopped
3 cloves of garlic
3 cannes of cubed tomatoes
3 carottes
3 zuchinnis
2 small potatos
1 butternut squash
1 Parsnip
2 cups of chicken broth
2 pinches of nutmeg
2 pinches of saffron
2 pinches of cumin
1 tube of harissa sauce
2 cans of chick peas
salt & pepper


Sauté the chicken, onions and garlic. Add the rest of the ingredients except the chick peas and leave on low burner (1 or 2) for 2 hours. Add the chick peas 30 minutes before the end.

For the couscous boil the water once it's boiled add the butter and the couscous. Let sit for 5 minutes then fluff with a fork.

Then you just put the sauce over a bed of couscous.
