Lemon Bars

2 1/2 c flour, divided
1 c butter, softened
1/2 c confectioner's sugar
2 c sugar
1/2 c lemon juice
4 large eggs
peel of 1 lemon, grated
confectioner's sugar

Preheat oven to 350. Mix together 2 1/4 c flour, butter, and confectioner's sugar in a large bowl until a soft dough forms. Remove and press dough into a 13x9x2 in baking pan.
Bake 20-25 min until lightly browned.

Beat sugar, lemon juice, 1/4 c flour, eggs, and peel until well mixed. Pour over the hot crust and bake 20 min or until set. (Note: 20 min in my oven.) Cool on a wire rack. Cut into bars. Center will be soft like a custard or pie filling. Sift confectioner's sugar over tops. Freezes well.

I miss Sad the lemon tarts I use to buy in Florida..
a french bakery near the beach.........OMG..I kid u not***
The american lady that owns the bakery,married this french baker and took him home.....YUMMMMM...now that was enterprise..... Cool
I can't seem to get the right recipe for tarts,after the Florida experience Razz ......

I love lemon bars (or lemon squares as we call them in my family)


This looks like the same recipe we use... sure are tasty! Also, a nice twist is to use lime juice - though you may want to cut down slightly on the sugar.

Limes sounds good, never tried limes...the sugar is for both not all dumped in at once Wink ....
but its a lemon bar Cool
