clotidle's ice cream post has sent me into a frenzy and after ordering and receiving a spanking new ice cream machine, i am now dying to make some pistachio ice cream. most of the recipes i have found seem to have pieces of pistachio in the final product. do any of you have a truly delicious recipe for silky smooth pistachio ice cream? thank you!

I'll check for some tried and true recipe but, right off the top of my head, I'm wondering if you steeped pistachios in boiled milk or cream and used that for ice cream if you'd get enough flavor. Got some to give it a whirl?

If that wasn't enough you could always run that through a food processor or a hand blender until you'd gotten a pretty smooth consistency. Then you could strain and carry on as for any smooth ice cream.

Last year I had great success just flavoring cream or a cream/milk mixture and then freezing whatever tasted good. Remember with frozen foods, you want more flavor at room temperature than you'd necessarily want because it will be less intense frozen.

my plan for tomorrow is to steep some ground pistachios and squeeze as much flavor as possible out of them. i am completely new to frozen cuisine, so I was unsure whether this approach would result in sufficiently flavorful goodness. I'll let you know how it goes...i am also thinking of some gianduja ice cream using the same method- yum! would love to hear from anyone that has a particularly splendid recipe however!

is a recipe from the Epicurious site for pistachio ice cream. 96% of the 26 people who reviewed it said they would make it again, so it must have some merit. It calls for finely ground pistachios brought to a boil in milk. I suppose you could strain the mix afterward, and leave out whole nuts.
I remember my father (strongly) disliking nuts in his ice cream too! I can take 'em or leave 'em

Would pistachio paste or pistachio pudding mix dissolved it into the cream/milk work?

I bought some pistachio gelato at the grocery store for "research." Very Happy

The brand I bought used pistachio paste, milk, sugar, and I think water. Pretty simple!
