my parents visited a pistachio farm recently, and came back with a giant bag of fresh pistachios, right off the tree, for me. any ideas on what to do with them, other than eat them out of hand? |

Pesto comes to mind - with a little mint and arugula (saw a recipe for this sometime back). Alton Brown did a dried fruit and pistachio coated dessert thingy that was Middle Eastern in origin that sounded good too. I vote for eating them too though. |

If you make pistachio ice cream I would suggest adding a little rose water. (You can usually find it in Middle Eastern markets, or the International section in a higher end traditional market). I once had pistachio rose ice cream at Ici (an ice cream shop in Berkeley that does unusual--but delicious--flavor combinations, like peach habanero). I am still dreaming of that ice cream... |
