I would like to know if it is true that there is a chocolate cake with mayonnaise. My mother used to make a cake like that I think when I was a kid and I loved it. Since she has passed away I don’t know who to ask about this. thanks! |

Thank you!! I am going to that chocolate cake right right now!
2 c. flour
1 c. sugar
2 tsp. baking soda
4 tbsp. cocoa
1/4 tsp. salt
1 c. water
1 c. mayonnaise
1 tbsp. vanilla
Sift dry ingredients into a large bowl. Add the water and beat 1 minute. Add the mayonnaise and beat 1 minute. Add the vanilla and beat 1 minute.
Pour into a greased and floured pan, 13 x 9 inch square for a very high cake. Sprinkle with chopped nuts and chocolate bits for a dandy frosting. Bake at 350 degrees for 35-40 minutes.

My mother also made that Chocolate and Mayo cake ... full fat mayo it was as well .... darn good as I recall ... |

I wonder if this recipe would work for vegans if made with eggless mayo, or if the egg in the emulsion makes the whole thing come together. I am not vegan, (if I were, how could I make my favorite no time to cook meal of rice and fried eggs) but two members of my extended family are, so I am always interested in how I could bake for vegans.
