I tried these today! It is nearly noon and still below freezing here (Utah, USA) so I'm baking. These
are fine muffins.
I used "dry roasted" jarred peanuts, ground in a little hand-held grinder, so they had texture, not just powdery. The sugar was plain grocery light brown sugar. I had a small forgotten jar of "Pumpkin Pie Spice" so chose that from Clotilde's threesome of suggested spices.
Very very good, (my SO agrees). Should be offered to anyone who has just come in from working or playing outside, or anyone coming to brunch .
