I tried these today! It is nearly noon and still below freezing here (Utah, USA) so I'm baking. These

are fine muffins.
I used "dry roasted" jarred peanuts, ground in a little hand-held grinder, so they had texture, not just powdery. The sugar was plain grocery light brown sugar. I had a small forgotten jar of "Pumpkin Pie Spice" so chose that from Clotilde's threesome of suggested spices.
Very very good, (my SO agrees). Should be offered to anyone who has just come in from working or playing outside, or anyone coming to brunch Smile.

Welcome to the forums, Foodiemom.

If you have a regular food processor, just use it on pulse. That way you can control the size of the grind and not get a powder.

A good mortar & pestle works well too.

You may not know it, but over at the Other Things forums there's a permanent thread for introductions. You might want to tell us a little about yourself over there.
