I'd give the freezing a go...no harm in trying...'n however it turns out..some serious cream and berries can be added if need be..

I have made this cake and frozen it and it was fine when defrosted.

Thanks, Barbara. I never got to the freezing stage because the cake crumbled into bits before it made it to the freezer. I attribute it to the eggs, which were possibly too large. I also added a heaping tablespoon of almond meal to the small amount of flour, which could have caused the collapse.

Nevertheless, the cake was delicious as always, and went very well crumbled over ice cream.

Hopefully I'll have better luck next time!
