Try making madelaines, dipping in melted chocolate, then rolling in slivers of candied lime zest.
I usually do this with orange zest, but no reason the lime shouldn't work just as well. |

That sounds really yummy. Even easier would be truffles rolled in lime zest and coarse-grained sugar.

Thanks for the suggestions,
I finally went with Key Lime Meringue Pie with a chocolate shortbread base in the end. My first time making or tasting Key Lime Pie, and it certainly won't be the last. Divine! |
