2 1/2 c flour, divided
1 c butter, softened
1/2 c confectioner's sugar
2 c sugar
1/2 c lemon juice
4 large eggs
peel of 1 lemon, grated
Preheat oven to 350. Mix together 2 1/4 c flour, butter, and confectioner's sugar in a large bowl until a soft dough forms. Remove and press dough into a 13x9x2 in baking pan.
Bake 20-25 min until lightly browned.
Beat sugar, lemon juice, 1/4 c flour, eggs, and peel until well mixed. Pour over the hot crust and bake 20 min or until set. (Note: 20 min in my oven.) Cool on a wire rack. Cut into bars. Center will be soft like a custard or pie filling. Sift confectioner's sugar over tops. Freezes well.
I miss the lemon tarts I use to buy in Florida..

The american lady that owns the bakery,married this french baker and took him home.....YUMMMMM...now that was enterprise.....
I can't seem to get the right recipe for tarts,after the Florida experience ......
