My friend made this and it is yum!

Cook well seasoned hamburger as you like it with sauted onions and fresh mushrooms. I have used taco seasoning. I have also mixed hamburger and italian sausage for the meat. Try any variation that suits you. =)


Wash, dry and cut zucchini, preferably a large one from the garden not the small ones in the store, lengthwise.
Clean out seeds creating a trough in the center.

Layer meat marinara sauce, fresh sliced tomatoes and mozzerella cheese as you like it filling the trough. I put the cheese on covering the whole zucchini.

Wrapp in foil and bake for 30 to 45 minutes in an oven at 350 degrees.

Bake time will be determined by the size of the zucchini.

Of course this recipe can be varied so many ways. But you will always say YUMM!! Laughing
