hi hi hi...
i am dying to make some delicious, dark, luscious, moist gingerbread but i don't have any good, tested recipes. any C&Zers to the rescue?? i want to make some for a christmas brunch! thank you! |

Coincidentally I just HAD to have some gingerbread 2 nights ago, so I tried this one.....but I made it in my old little "donut baking machine" that I bought when my kids were little (how long ago was THAT ?!) I thought that this recipe was especially good because of the bits of crystallized ginger in it.

Chucha and Bittersweet-
I also like Claudia Fleming's great gingerbread, only be warned:
THERE ARE TWO VERSIONS OUT THERE!
Be sure to make the one with only half cup measures of both white and brown sugars, not whole cups.
I mistakenly made two whole batches side by side for the hospital cronies last weekend, but got the bad recipe. Needless to say, after hand grating my spices (yes, cinnamon, too, and even added heat with ground white and red pepper), I now have 20 ugly, sunken, sickeningly sweet mini loaves in my freezer for hiking season next summer. Unfortunately for my colleagues, they're gonna be fantastic on the trail!!!
Once you reduce the sugar to the correct amounts, its DYNAMITE STUFF!

You have to get the cake out of the pan in five minutes, or it tends to stick, no matter how carefully you're buttered and floured the pan. |

Some time ago I wrote an entry about my grandma's gingerbread on my blog along with the recipe. It's a family tradition recipe and I love it a lot.
