A cheese "pie" I found while looking for something else

After always trying so hard to keep the phyllo sheets untorn and perfectly smooth here is an odd (to me) technique--crumple the phyllo, and pour carbonated water over the whole dish before baking!

It's a savory knock-out.

This sounds great! I'm looking forward to trying it, specially the crumpling up the pastry and pouring club soda over it all.

That appeals to my .... um.... sense of imperfection. (If there is such a thing)

Sounds yummy! Also can't wait to try pouring the soda water over it all... what an interesting thing to do to phillo pastry!

If anyone tries it soon, please post what happens.

This sounds very similar to Bulgarian banitsa. I just had it a month ago at a little Baba Marta potluck I hosted. The phylo was a little mushy but I liked the flavor very much.

Hi, sweetbabyjames! (The pie's not mushy, just melded into a golden savory whole!)
Baba Marta seems to be an old woman-- "Grandma March"--with springlike changeable moods. (I look stuff up. According to Rich, my SO, all I do is look stuff up. Oh, and ruin the knives.)
So thanks for a Bulgarian history/geography/cooking lesson.

Gingerpale, I know I'm going off at a slight tangent here, but you mentioned that you look stuff up. We look stuff up too, and we want to think of a word to describe the 'urge to find out trivia by looking it up on the internet'.

Prior to the internet, we might have wanted to find out some obscure fact, but it took too much effort. Now we can 'Google', look on Wikipedia or use many other internet souces to find this stuff out. So what's a word to describe that?

It's not even the process of looking the stuff up, it's the feeling of 'I must look that up on the 'Net'.

Anybody?

What a damn delightful question, Judy! I'm the 'looker-upper" in my house, but I suppose many homes have 3, 4,5,6 people who will "check" as soon as a point comes up! A word for it, a word-- I know it is scratching an itch, I know it is instant gratification, I know some unwholseome phrases that would express this, but we should keep this above the waist..
Cyber satisfaction should have its own word.
Like Judy said-- Anybody?
