I made this at the weekend and it went down really well. It's not a precise recipe.
I used 250g of Jusrol ready made shortcrust.
Roll it to go into a 9 inch spring cake tin so that it comes up about 1 inch up the sides. Blind bake it according to the instructions.
When it's done spread the base with some honey or mixed fruit jam.
for the crumble use 100 g of plain flour
50-75 grams of golden caster sugar
50 g of unsalted butter.
Cream the butter and sugar together. Mix in the flour. I just use a fork, it works well.
Slice or chop up 1.5 or 2 dessert apples and lay them in the pastry case. Sprinkle on a handful of blackberries.
Spread the crumble over the top.
Bake at 180C for 35-40 minutes till the top is golden or brown, not anaemic.
Serve hot or cold with cream, ice cream or custard. _________________ Cake!!! Gimme, Gimme,Gimme!
Be aware that the fruit and crumble will sink a bit during cooking. I used just one apple for mine but I think more is needed. I used golden delicious.
i guess any fruit will do if it's not too wet or you can seal the pastry with beaten egg or a sugar syrup. Apple and banana, apple and rhubarb, just rhubarb, plum, apricot. _________________ Cake!!! Gimme, Gimme,Gimme!
Golden delicious and blackberry--yes! a fine dessert--I like to stick to white sugar, though, so the fruit tastes are clear. When it is ONLY apples, then I use brown sugar. Griffin mentioned this particular dessert too--must be popular!
