Gourmet called these "unpretentious but super good" several years ago.
Corned Beef Baked in Potatoes
6 medium baked potatoes
2 tablespoons butter
1 minced onion
1 minced garlic clove
3 cups ground/minced cooked corned beef
2 beaten eggs
3 tablespoons cream
1 tablespoon Dijon mustard
1/4 cup minced parsley
dash of Tabasco (hot sauce)
salt and pepper
Halve potatoes (the long way) and scoop out flesh, reserving potato shells. Mash the potato in a bowl. Saute onion and garlic in butter 'til soft and translucent.
Mix all ingredients except potato shells, then spoon mixture into the shells lightly. Bake at 350F (177C) for 35 minutes. |
