Can anyone recommend a book about food safety? Amazon lists quite a few, and I was wondering if anyone of you had an opinion on any one of them. Ideally, I would like something of a quick reference book, that wouldn't be too theoretical or boring to read, just explain the basics and throw in some do's & don'ts and practical information (such as "how long can you keep this or that").
Thanks a lot for any insight!

I can recommend "Applied Food Service Sanitation" which was one of the books I used in culinary school. It is a Food and Drun Adminastration approved book that covers everything from food safety to first aid. It was and still is a valueable reference for me. I hope this helps! _________________ "It's watery....and yet there's a smack of ham."
