After reading your recipe for canelés, I purchased 2 molds from Silicone Zone, and am looking forward to being able to create these delicious treats. However the directions with the molds say oven safe to 428° degrees. Your recipe calls for 480°. I thought all silicone molds could take high temperatures. I have written to Silicone Zone with the same question, but have not gotten an answer. Have you ever run into this problem? I really want some canelés!

I always thought they were safe to temps up to like 800. Let me know if you ever get an answer

428°C = 802°F

Maybe check and see if directions with your moulds specify whether the temp is celsius or farenheit?

answers this question and others about their products. They claim their products will withstand sustained use at temperatures of 675 degrees F without breaking down.

I just spoke with the people at Silicone Zone, and they told me there is an error on their packaging. All their bakeware is Oven Safe to 572° and their gadgets to over 600. So mystery solved, and I am hoping for my first batch of successful Canelés this evening!
