Hi - We subscribe to a fresh produce and veg bin service and one of the things we like about it is we get surprise veg and fruit from time to time. Today's were bean sprouts - what do you do with bean sprouts? Any suggestions would be appreciated. Thanks.

I just ate bean sprouts last night in a big steamy bowl of pho, which is my favorite way to use them.

Use them in any stir fry you make, as an addition to, or substitute for, any of the other veggies.

Throw a handful into a tossed salad.

Drain them on paper towels if necessary and use on sandwiches, just as you would alfalfa sprouts.

Or try this

Bean Sprout Salad

4 tbls oil (I prefer toasted sesame oil for this)
2 tbls white wine vinegar
2 tbls soy sauce
1 garlic clove, minced
Pepper to taste
1 tbls honey
8-10 oz bean sprouts
1 small red pepper, chopped
1 red onion, thinly slcied
2 tbls toasted sesame seeds

Mix oil, vinegar, soy sauce, garlic and pepper. Add honey sparingly, up to 1 tablespoon.

Put sprouts, red pepper, and onion in a large bowl. Add the dressing and toss gently. Chill for at least 1 hour.

Just before serving add sesame seeds and toss again.

In keeping with Erin's Vietnamese suggestion, they're also an indispensable ingredient of bo bun. And there's a red cabbage, fig and bean sprout salad recipe somewhere in the C&Z archives that I've not yet tried, but which has long tempted me. Let me know what it's like if you try it!

Thanks for the suggestions. I also found a bean sprout hummus that was very good. I'll try the other suggestions - haven't done vietnamese at home before so will have to stock up on some oils/ingredients.
