A fellow blogger, the rather talented young Cooplet mentioned a Parsnip and Lemon cake, but she'd eaten it, not made it. I wondered, given the C&Z cake if any of you have heard of the P&L cake (possibly the P&O ferry company might want to do a Parsnip and Orange variety!) It sounds interesting and after all, roast parsnips do have a sweetness to them.

Anyone done this?... Clotilde?

It seems to be a variation of carrot cake.

What a fantastic idea! I would imagine the citrusy notes of teh parsnip work well with the lemon. I love recipes like that. My friend just introduced me to a chocolate beet cake. Yum!
