There are a LOT of elderflowers where I live. If you drive out to the country in spring you will see tons of clusters of them-- I think because my part of the U.S. was settled by Germans. I think German settlers brought them over and they escaped gardens to become wild here. I want to try making elderflower cordial. I think I can wild harvest because the bushes are so common and so weedy. I also once ate elderflower fritters that a friend made. He dipped them into a thin batter and fried them in about an inch of oil. They were quite good.

I think I found some while walking at Seattle Center, but sadly I won't be using them. One, my move is coming very soon and something tells me this is not the time. Two, some of the horrors I've seen perpetrated in those bushes. . . (shiver).
