I made this on Thanksgiving morning. The original banana version came from Food for Thought, a fundraising cookbook for American Brittany Rescue.
Wet stuff:
Combine
1 C. mashed banana or cooked sweet potato
1/4C melted butter
1 egg
2/3 C agave syrup or honey
Dry stuff
1-1/2 C. whole wheat flour
1 t. baking soda
Dash salt
Optional: 1/2 C. toasted pecans or walnuts, 1 C. chocolate chips.*
Mix together dry stuff. Add wet stuff. Mix gently and add nuts and/or chocolate chips. Pour into greased 9"x9" pan and bake at 350 for 35-40 minutes. Serve with butter or cream cheese. Maybe some marmalade.
*We don't do the chocolate chips--love chocolate, but His Royal Arfness Orion Ranier loves this treat.

'serve with butter' oh what a collection of words!!!
I love banana cake/bread (must be good for you because banana = potassium!)...however ma darlin' doesn't care for the taste of it at all..

bananabread with chocolate is great - made one last week (Molly's ('orangette') recipe from her lovely book - without the ginger, with the chocolate chips.) YUM.
Somehow I think this easy recipe would work with grated apples as well. Since I have some apples to finish I will give it a try and report back! _________________ http://swans-place.blogspot.com
